Veal chops with crab mayonnaise

Ingredienti:

Patate Fritte 7 mm (surgelati freschi) o
Patate Fritte 10 mm (surgelati freschi) o
Patate Fritte 12 mm (surgelati freschi) o
Patate Fritte 15 mm (surgelati freschi) o
Patate Fritte da Forno 10 mm (surgelati freschi) o
Crinkle Frites (freddi) o
Patate Fritte Fast Fry 9 mm (surgelati freschi) o
200 g veal chops
20 g marinade spices
salt, pepper, oil

Crab mayonnaise:
30 g mayonnaise
50 g crab sticks
30 g plain yoghurt
20 g pickled celery
lemon juice, a pinch of sugar,
salt, Worchester sauce

Crab mayonnaise: let the crab sticks defrost, cut them finely, and dice the celery . Stir the mayonnaise with yoghurt, lemon juice, salt, Worchester sauce, add crab meat, pickled celery. Mix all ingredients together and serve immediately.
Debone the chops, make a cut into them, tenderize lightly and marinate in the mixture of spices. Let it marinate for at least 2 hours. Fry the steaks on both sides quickly, allowing the meat to rest (so that it could keep the gravy). Put the steaks on preheated plates, serving them with fried crispy Farm Frites fries (in deep fryer at 175°C for approx. 3 min), crab mayonnaise and lemon.
